Using pot holders and both hands tilt the removable pan up on the side opposite from the probe socket and pull the skillet to the left to disengage the probe socket from the base. Caution: Be careful when removing the pan for serving, as it will still be hot from cooking. Note: Use a trivet to protect the surface where the removable pan is being placed. If using metal utensils, be careful not to scrape the nonstick finish. Caution: Do not operate the skillet without the cooking base attached. Medium-high heat ­ 350°F / SAUTÉ Use to sauté vegetables such as onions, green pepper, or mushrooms. high heat ­ 400°F / BROWN Use to brown, pan fry and pan broil meats and to stir fry meats and vegetables. Breaded foods such as vegetables, meats, fish, and poultry are pan fried at this temperature with a small quantity of oil. 6 5 Searing - 500°F / SEAR Use to quickly brown meats at high temperature while sealing in the meat's juices. When preheated to this setting, the skillet will retain this temperature for 3 minutes. If longer searing is needed, press the SEAR button on the digital control probe. USING ThE SEAR FUNCTION This unique feature allows you to sear meats, fish, vegetables and fruits for up to 3 minutes at a high temperature and then automatically lowers the temperature to the original setting to continue cooking. Press the SEAR button on the digital control probe to raise the temperature in the skillet to 500ºF. The light next to SEAR on the temperature control probe will begin flashing. When the skillet has reached the SEAR temperature, the light next to SEAR will become constant. Note: It is not necessary to wait for the skillet to heat to the preset temperature before selecting SEAR.
