Using a meat thermometer, test for doneness by inserting the meat thermometer into the center of the food being cooked and make sure the thermometer is not touching the bone or heating plates. Use a warm, soapy sponge to wipe heating plates clean and allow any greasy runoff to drip into drip tray; rinse sponge and wipe again to remove any soapy residue.
